You will need:
¼ cup chia seeds
1 can full-fat coconut cream
½ cup of 70% dark chocolate chips
¼ cup of cocoa powder
4 pitted Medjool dates
¼ cup of maple syrup
1 tbsp. vanilla extract
Pinch of salt
Instructions :
Mix chia seeds and coconut milk. Set aside.
Melt the dark chocolate in a double boiler or microwave then add to the chia mixture.
Blend the chia mixture with the rest of the ingredients until smooth and creamy.
Transfer the mousse into small cups and place in the fridge to set at least an hour.
Healthy key lime pie
Sometimes we all need a sugar fix to satisfy our cravings but not necessary chocolate. If you’re a fan of the tangy-sweet lime pie like me, you will love this easy and delicious recipe.
You will need :
Crust
2 ½ cups graham cracker crumbs
2 cups unsweetened vanilla almond milk
1 tsp butter
salt to taste
Filling
1 can sweetened condensed milk
4 large egg yolks
1tbsp corn-starch
¼ cup plain non-fat Greek yogurt
1 tsp key lime zest
¾ cup key lime juice freshly squeezed
Instructions:
Preheat oven to 360 degrees Fahrenheit.
Combine the crust ingredients then press it into a pie dish. Bake for 13 minutes and let cool.
In a large bowl, whisk together the condensed milk and egg yolks then the corn-starch. Add in the yogurt and lime zest.
Last, whisk in the lemon juice until incorporated into a smooth, creamy texture.
Scoop mixture into the crust and bake for 16 minutes.
Let cool for 2 hours and refrigerate overnight. Slice and enjoy!
No-bake chocolate chip cookie dough bars
Cookie dough is one of the most popular desserts. This healthy twist is perfect for enjoying if you’re eating clean but have an emergency sweet tooth.
For this recipe, you will need:
Cookie dough:
-1/2 cup unsalted butter or ghee
– ¾ cups of coconut sugar
-1 ½ cups of almond flour
– 1 cup unsweetened shredded coconut
-1/4 cup coconut milk
-2 tsp vanilla extract
-salt to taste
-1 cup dairy-free chocolate chips
Topping:
-1 ½ cup melted dairy-free chocolate chips
-2 tbsp unsalted butter or ghee
– Pinch of sea salt
-1/4 cup unsweetened shredded coconut
Instructions:
In a double boiler, melt the chocolate with the rest of the toppings.
While it’s melting, cream together softened butter and sugar with a mixer on high until fluffy.
Add almond flour, coconut, coconut milk, vanilla, and salt. Beat on medium until combined.
Mix in chocolate chips by hand.
Place dough on an 8×8 pan lined with parchment paper and spread mixture.
Once the chocolate topping is cooled down, pour it on top of the cookie dough and spread evenly.
Sprinkle the remaining shredded coconut.
Cover and refrigerate overnight before serving.
