This salad is filled with fiber and antioxidant-rich vegetables that will help keep your skin looking fresh and young.
- 1 head romaine lettuce, torn into pieces
- 1 small bunch arugula, torn into pieces
- ½ cup freshly chopped flat-leaf parsley
- 6 freshly chopped basil leaves
- 1 carrot, thinly sliced
- 1 stalk celery, thinly sliced
- ¼ cup radish sprouts
- 1 fennel bulb, thinly sliced
- 1 tsp toasted sesame seeds or 1 tsp ground flaxseeds or ¼ cup toasted pumpkin seeds
- Lemon-Lime Olive Oil Dressing (see below) or Sesame-Ginger Carrot Dressing
Combine all ingredients except the dressing in a large bowl. Toss with just enough dressing to lightly coat. Serve Immediately.
Lemon-Lime Olive Oil Dressing:
- Juice and zest from 1 lemon
- Juice and zest from 1 lime
- 4 Tbs extra-virgin olive oil
- ¼ tsp sea salt
- ¼ tsp freshly ground white pepper
Whisk all of the ingredients together in a bowl and let sit 10 minutes before using.
Sesame-Ginger Carrot Dressing:
- 2 tsp freshly minced ginger
- 2 garlic cloves, minced
- 2 Tbs very finely chopped carrot
- 4 tsp rice wine vinegar
- 4 Tbs toasted sesame oil
- Juice and zest from 1 lime
- 2 tsp tamari or low-sodium soy sauce
- ¼ tsp sea salt
- ¼ tsp freshly ground white pepper
Whisk all of the ingredients together in a bowl and let sit 10 minutes before using.
