You don’t need to shell out money buying Mom expensive flowers or jewelry on Mother’s Day. Any mom will tell you the best gift you can give her is quality time. But she’s still got to eat, right? The perfect solution: Treat your mom by whipping up a yummy brunch just for her.
We asked nutritionist Keri Gans, author of The Small Change Diet, for her recommendation on a healthy and delicious brunch to make for our moms. Her vote:
- Scrambled eggs
- avocado toast with 100% whole grain bread and sliced tomato
- a Bloody Mary
Why It’s Good For Mom (And You!)
Eggs:
“The eggs provide protein, which is very important to build and repair muscle, as well as preventing muscle loss in aging adults,” explained Gans. Eggs are also a good source of the carotenoids leutin and zeaxanthin, which are important to help prevent macular degeneration, the leading cause of blindness in Americans over 60.
Avocado Toast:
The whole grains in the brain are a solid source of fiber, which can help lower cholesterol levels and prevent heart disease, noted Gans. “I like to smash the avocado on the toast and use in replace of butter,” said Gans. Avocado is rich in monounsaturated fats, which are good for your heart, as well as vitamin E, which promotes healthy skin and hair. Top the avocado toast with the tomato, which is a good source of lycopene — another heart protector.
Bloody Mary:
Lastly, brunch wouldn’t be complete without a cocktail — amiright? — and the tomato juice from the Bloody Mary is rich in antioxidants, which may help protect against age-accelerating free radicals and strengthen the immune system. Cheers to Mom!
