Tomatoes are packed with vitamins A and C, as well as potassium and antioxidant lycopene. Consuming tomato with a little fat such as olive oil helps “unlock” all those great nutrients so the body can absorb them.  Try raw in salad or on avocado toast. You can also toss into pasta or grain dishes. Tomatoes are also perfect for making homemade sauces.
