Vegetable oils have been touted for years as protective against heart disease, but only certain varieties live up to the claim. Those high in omega-3s, like walnut, flaxseed and canola oils, confer cardiovascular benefits. Those with high omega-6 content and low omega-3s, however, such as corn and safflower oil, may actually increase the risk of death from heart disease.
